Our weekly meal plan, planning healthy, slimming world friendly meals for the family @gymbunnymum

We’re really starting to get focused on proper healthy, low fat high protein meals again in our weekly meal plan. The hubby & I hit the gym four times each last week as we’re definitely on a roll and don’t want mess that up by eating unhealthily.

I’m concentrating on fat loss these next few weeks leading up to a wedding we have in July so will be doing lot’s of HIIT (High Intensity Interval Training) so need to make sure my meals are low carb & high protein, although I won’t be cutting carbs altogether as you do still need carbs when working out.

BREAKFAST

Half term’s over so Archie’s back at nursery this week, this means I can get back in the gym in the mornings. I’ll be having a healthy breakfast of scrambled eggs, Syn Free baked egg muffins or protein fruit smoothies.

LUNCH

I’m going to be making a batch of soups this week for lunch, a tomato & basil soup and carrot & coriander.

DINNER

  • Sweet  sour pork stir fry
  • Chicken, spinach & pasta salad (gluten free)
  • Chicken in oyster sauce with lot’s of veg
  • Fish with steamed veg
  • Homemade burgers using low fat steak mince, no bread for me
  • Massaman curry & rice
  • Steak with sweet potato wedges

Do you meal plan or think it will be something you want to start? I’ve definitely started spending less on food shopping since I started buying exactly what what we need.
