This week is a short week as we’re going to Kendal Calling on Friday morning. I love a festival so can’t wait to go back. This week’s meal plan will revolve around using up as much of the food in the fridge as we can as we’ll be away for four days.
I’ll still be trying to cook healthily this week and with the exception of the copious mounts of gin & cider I’ll be drinking over the weekend, I’ll try not to eat junk all weekend!
Anyhoo, this week we’ll be eating:
Porridge, porridge & more porridge. It really keeps me full until lunch without being tempted to snack so I’m sticking to it again this week.
Homemade soups, jacket potatoes & salads
- Chicken & mushroom risotto
- Prawn stir fry using whatever veg we have in the fridge
- Omelette using up any leftover meats, veg & salad
- Chicken enchiladas
- then we’ll be away all weekend!
