MY GO TO SPONGE CAKE RECIPE

Ingredients
  • 225g butter or marg
  • 225g caster sugar
  • 4 eggs
  • 225g self raising flour
  • 1 tsp vanilla essence
  • 1tbsp milk to loosen
Instructions
  1. line two cake 8inch tins with greaseproof paper
  2. cream together the butter & sugar until pale & fluffy. I use my electric mixer, much easier
  3. add the eggs one at a time, mixing everything together between each egg
  4. slowly add the flour in small amounts
  5. add the vanilla essence and milk if required
  6. divide between the two tins equally
  7. bake on 180c or gas mark 4 for around 20-25 mins until a skewer comes out clean and the top of the cake is golden
