The past few years have really been a struggle for us as a couple, for us a family. It’s something that most Special Needs parents go through & it’s sad.

It’s sad that life puts on so much pressure and drains every ounce of energy that you just don’t have anything left for each other.

But we weren’t ever going to give up on each other. We just had to start making time for each other, to date again & to just be a couple.

Now our boy is at school full time & we are both self-employed it was time to carve out some us time at least once a month. We struggle for babysitters for the evening due to Archie’s routine & sleep issues so decided to make it a date lunch on a Friday instead and have the day to ourselves and head out into Manchester.

Vapiano Manchester has become one of our favourite restaurants in town, we’ve been a couple of time before and have enjoyed it every time. The food is just so yum! Plus the whole concept is perfect for lunch when you don’t have a great deal of time & have to rush back for the kids.

Instead of ordering direct from the menu via a waiter you simply head to your choice of station with the ‘credit card’ given as you enter the restaurant and place you order directly with the chef there. Your food is made fresh to order right in front of including any tweaks you fancy. If you don’t want peppers on your pizza (like me) you can switch for another ingredient or two instead.

Between us we couldn’t decide what we wanted so we opted for a starter each and then to order our two meals but have a little bit of each, we’re good like that.

I went for the gorgeous brushetta with mozzarella as I’ve had the brushetta before and loved it, although never with mozzarella. I’ve never even had it uncooked before so wasn’t exactly sure what to expect but I’ll definitely be choosing this again over the standard tomato brushetta. The other brushetta was really nice but this one is just next level.

Then followed by Gamberetti E Spinaci, which was a pasta dish with king prawns, pesto, tomatoes & spinach. Plus I added extra prawns as I knew the hubby would want some (most) of them. He went for Barbecue Chicken Pizza so I could have a couple of slices too.

This was definitely the best pasta dish I’ve had, the handmade pasta is amazing. I’m not normally a huge fan of pasta as I can find it to much and not very flavourful but I love the pasta here, and the prawns are just so fresh & meaty, I was glad I ordered extra.

If you’re ever around the Corn Exchange or Exchange Square in Manchester then you really need to pop in and try out Vapiano, you won’t be disappointed.

    Oh I’m thrilled to read your review. We’re off to Disneyland Paris in 2 weeks time and there’s a Vapiano restaurant in the Disney Village. We may just visit it on our first night for dinner!

    Vapiano is my all time favourite restaurant and I go every time I’m in London. I’ll have to go next time I’m in Manchester

    I love Vapiano’s. We used to each there frequently when we lived in Berlin, especially after they introduced gluten free pizza!

    Oh I am so jealous! I am desperate to go here! It sounds amazing and such great service too. My husband and I have had a rocky patch with having four children and no time for eachother, it can be tough!
