It’s the first Monday of 2015 so the perfect time to start joining in with Meal Planning Monday.
There was a few changes towards the end of 2014, the main one affecting our finances as I decided to wind down my business in order to spend more time focusing on the boys, especially with Archie’s suspected Autism. Money is tighter now we’re living on one salary and Meal Planning is a great way to keep to a tight budget whilst still eating healthily, especially as I’m trying to get rid of my Mummy Tummy. Most of the ingredients for the meals below were bought in the reduced section, so even better value for money!

I’ve also baked super healthy oatmeal cookies for me & the hubby to snack on but the boys weren’t fans of these so I’ve baked them regular oatmeal cookies.
I normally separate all the packs of meat into meal portions before I freeze them but I didn’t this time with the mince so we’re having two meals made from mince this week to make sure it doesn’t get wasted. The chicken kiev’s were reduced to 35p in Morrisons so I bought four packs, we’ll be having them once a week for the next couple of weeks! I’ve downloaded and printed off lot’s of these meal planners too so the Hubby & Teenager can stop nagging me about what’s for tea.
