If we have a few bananas going a bit dark then I always like to bake something with them rather than be wasteful and throw them away. So the kids were very happy when I decided to bake Banana & Nutella Muffins. They lasted a whole two days! Although Daddy and I did have one too, they were just too yummy to resist.

  • 100g butter or margarine
  • 2 free range eggs
  • 175g golden caster sugar
  • 225g self raising flour
  • 1tsp baking powder
  • 3tbsp milk
  • 2 very ripe mashed bananas
  • Nutella
  1. Mix together the butter & sugar until fluffy
  2. Add the eggs one at a time
  3. Sift in the flour & baking powder, half at a time and mix
  4. Add the milk
  5. Gently fold in the mashed bananas
  6. Spoon the mixture into the muffin or cupcake cases then add a dollop of Nutella to each. Swirl together with a cocktail stick
  7. Bake for approx 20 -25 mins on 160c or gas mark 4 until the tops are golden brown

    Oh my, these look gorgeous. And easy. I’ve been looking for a recipe to make with my daughter, and I think this might be it. If I can get through it without a tantrum because she wants to eat all the Nutella, that is (I say Nutella, but what I really mean is the knock-off Aldi stuff).
