OK this is not exactly a recipe as such, you basically just put some lovely stuff on top of some shop bought puff pastry but it’s fab and so easy to make this tomato & red onion puff pastry tart

It was such a cheap meal too, the pre rolled puff pastry was only 49p in the reduced section in the supermarket, always check out the reduced section! We has some cherry tomatoes, half a red onion and some garlic & herb Philadelphia in the fridge so that’s what went on our tarts.

After cutting the pastry into squares, I placed some chopped tomatoes, the Philly & red onion in the middle of the pastry then brushed the edges with milk, popped them in the over for about 12-15 mins then served with a drizzle of beetroot balsamic dressing, and a beetroot & rocket salad. Yum!
